No Bake Mango Pie
Updated: Nov 8, 2024
This is an all time favorite with my daughter who wants this during Thanksgiving. It’s a good option during mango season when you crave for cold desserts in hot summer. Its tasty and easy to make. I enjoy making this pie as there is no baking required for this recipe.
Cooking/prep time: 20 minutes. Setting time in fridge: 12 hours. Serves: 8
Ingredients for stuffing:-
- 2 counts of 8 oz Pie crusts
- 16 oz Philadelphia cream cheese
- 14 oz sweetened condensed milk.
- 1 ½ cups of Mango Pulp
- 2 oz Cool whip
- 1 packet of unflavored gelatin
- ¼ cup of boiling water
- Reddi wip
Method:-
1- In a bowl add cream cheese and whisk it with a hand mixer for 3-4 minutes
2- Add mango pulp and condensed milk, and blend well for 3-4 minutes.
3- Add the gelatin to the boiling water and mix till all powder dissolves
4- Add the gelatin liquid to the mixing bowl and stir it
5- Add the cool whip last and mix all for another 2 minutes
6- In 2 equal parts pour this into the pie crusts, leaving ½ inch for closing the lid
7- Add a spoon of mango pulp in the Centre and swirl it with a fork on both pies
8- Cover with lids and keep it in the fridge for 12 hours
9- Cut the pie in 8-12 pieces
10- Serve with Reddi-wip on top and enjoy
Note – You can decorate the pie in many ways, such as with mango or banana slices, Cool Whip topped with berries. Be as creative as you like. If filling is left, keep it in the freezer and use it later. You can use 6 oz pie crusts if you don’t get 8 oz crusts.
